Roasted Beet Salad


Why beets???

Beets are an amazing power food. Beets contain nitrates, which are a vasodilator and help to promote blood flow. Increased blood flow improves performance and stamina in the gym and helps heart health. Beets also contain betaine, which help to fight inflammation and detox the body! Beet it ;)

INGREDIENTS:

-1 Cup Spinach

-1 Cup Tomatoes

-1/2 Avocado

-1/4 Cup Sunflower Seeds

-1oz Goat Cheese

-2 Tbsp. Olive Oil

-1 Tbsp. Balsamic Vinegar

-Roasted Beets

DIRECTIONS:

  1. Preheat oven to 375 degrees F.

  2. Coat beets lightly with oil.

  3. Wrap beets in aluminum foil, place on a baking sheet, and roast in the oven until cooked through, approximately 45 to 60 minutes.

  4. Remove from the oven, let cool for 10 minutes, and then peel and slice into 1/4-inch thick slices.

  5. And mix all ingredients and enjoy!
