Cold Noodle Salad
Holy yummmmm!!! This is a new one for me and is quite tasty! I wanted a simple, summer salad that was not too heavy. This makes a great side dish for dinner or you could add a lil protein in it for a complete meal!
INGREDIENTS:
-2 Zucchinis
-1/2 Cup Chopped Cherry Tomatoes
-1/2 Cup Kalamata Olives
-1/4 Cup Capers
-1/4 Cup Roasted Garlic Olive Oil
-Salt and Pepper to taste
-Dill Weed to taste
DIRECTIONS:
1. Using a spiralizer, make your Zucchini Noodles.
2. Chop Tomatoes and Olives.
3. Mix all ingredients and enjoy!!
