Crockpot Fajitas!!


One of my all time favorite Mexican dishes are fajitas! What I love about fajitas is that they still can be keto friendly and so tasty! This is the base recipe calling for only 7 ingredients, but you can get creative from here with toppings! I used short ribs, but you could also use a chuck roast or chicken!

INGREDIENTS:

-2lbs. Short Ribs

-1 Onion (sliced)

-2 Peppers (sliced)

-1 Cup Green Chiles

-2 Cups Broth

-2 Tbsp. Taco Seasoning (I love The Happy Eater Blend)

-2 Tsp. Salt

-2 Tsp. Pepper

DIRECTIONS:

1. Slice Onions and Peppers.

2. Place Short Ribs at the bottom of the crockpot.

3. Add remaining ingredients and cook on low for 6-8 hours!!

4. Mmmmm. Enjoy!!! Awesome toppings could be Sour Cream, Guacamole, Cheese! You could serve these in Know Foods Wraps or on top of a salad or on a bed of riced cauliflower!!
