Lemon Arugula Salad
This is such a tasty simple dish and it is light! Arugula is packed with Calcium and Potassium, which are great for blood clotting and overall electrolyte balance, Folate, which is a powerful B Vitamin, and C, which helps support a healthy immune system.
✧ Arugula Salad
INGREDIENTS:
-Arugula
-Hardboiled Eggs (1-2)
-Sliced Roma Tomato
-Green Olives
-Juice from 1/2 Lemon
-Avocado or Olive Oil
-Shredded Parmesan Cheese
DIRECTIONS:
1. Bring water to a boil and place Eggs in the water and boil for 10 minutes. Run cool water over the Eggs and peel.
2. Slice Tomatoes and Eggs.
3. On a plate, mix all ingredients. Then, squeeze the juice from the Lemon and drizzle Olive or Avocado Oil on top.
